Ingredients
- 1 large heirloom tomato
- 1 tsp. Diamond Crystal salt
- 1 tsp. sugar
- 3 Tbsp. fresh lime juice
- 2 Tbsp. Mexican hot sauce
- 1 can butter beans (rinsed)
- 2 Tbsp. extra-virgin olive oil
- ½ small red onion
- ½ avocado
- 1 small jalapeño
- tortilla chips or broken tostadas, to taste

1. Core and chop tomato
- COOK 2 Core and coarsely chop the heirloom tomato
2. Rinse beans
- COOK 1 Rinse the butter beans
3. Pureé tomato mixture
- COOK 1 In a blender, pureé the heirloom tomato, Diamond Crystal salt, and sugar until smooth
4. Combine beans and season
- COOK 1 Transfer to a medium bowl and stir in fresh lime juice, Mexican hot sauce, the butter beans, and extra-virgin olive oil
- COOK 1 Let sit at room temperature for at least 15 minutes
5. Slice red onion
- COOK 2 Thinly slice the red onion
- COOK 2 Thinly slice the jalapeño
6. Slice avocado
- COOK 1 Thinly slice the avocado
7. Plate and serve
- BOTH Transfer bean mixture to a large shallow bowl, arrange red onion, avocado, and jalapeño over it, and drizzle with a little more olive oil
- BOTH Serve with tortilla chips or broken tostadas for scooping
