Chop the braising beef into 200g slices

Ingredients
- 1.2 kg braising beef (chopped into 200g slices)
- sea salt, to taste
- 1 dash vegetable oil for beef
- 6 carrots (peeled)
- 3 small onions (cut into halves)
- 1 garlic clove
- 1 bay leaf
- 1 sprig fresh thyme
- 10 g sugar
- 125 ml red wine
- 75 ml red wine vinegar
- 200 ml bitter beer
- 1.1 l beef stock
- 1 tsp cornflour
- 1 dash gravy browning
- 1 handful chives (chopped)
- 24 button mushrooms (sliced thinly)
- 1 shallot (finely diced)
- 1 dash vegetable oil for mushrooms
- 25 g butter
- 25 g plain flour
- 600 ml milk (hot)
- 25 g green peppercorns
- 2 handful parsley
- 1 sheet puff pastry (cut into 6 equal circles the same size as your ramekins)
- 1 egg

1. Mise en place COOK 2
- Prep 6 carrots: peel
- Prep 3 onions: cut into halves
2. Prepare beef COOK 1
- Chop the braising beef into 200g slices
3. Slice mushrooms COOK 2
- Slice the button mushrooms thinly
4. Brown the beef COOK 1
- In a pan, season the braising beef with sea salt and brown it in vegetable oil until golden brown all over
- Add the peeled carrots, halved onions, bay leaf, and garlic to the pan
🤝 Cook 2 hands over the carrots and onions.
5. Make the roux COOK 2
- In a thick-bottomed pan, melt the butter
- Stir in the flour and make a roux base
6. Mise en place COOK 2
- Prep 600 ml milk: hot
7. Dice shallot COOK 2
- Finely dice the shallot
8. Add the milk COOK 2
- On a low heat, add the hot milk incrementally, making sure the bay leaf has been removed, and stir in well each time
9. Caramelise vegetables COOK 1
- Sprinkle in the sugar and allow the braising beef and vegetables to caramelise
- Remove the braising beef and vegetables from the pan and deglaze the pan with the red wine vinegar followed by the red wine

10. Cut pastry COOK 2
- Cut the puff pastry into 6 equal circles the same size as your ramekins

- Prep 1 handful chives: chop
12. Braise the beef COOK 1
- Place the braising beef, vegetables, and fresh thyme back into the pan
- Add the bitter beer, bring the liquid to the boil
- Add the beef stock
- Cook for about 1 ¾ hours at 160°C until very tender
13. Make beer sauce COOK 2
- Remove the beef, lift out the carrots and onions carefully, and set them aside
- Pass the remaining liquid through a sieve and boil it in a pan until it reaches a sauce consistency, If necessary, add a few drops of cornflour to thicken, or gravy browning to colour

14. Fry mushrooms COOK 1
- In a pan, fry off the button mushrooms in a few drops of vegetable oil until golden
- Add the shallot and stir for about 15 seconds until golden
- Remove from the heat and scrape onto a plate, Set aside
🤝 Cook 2 hands over mushrooms.
15. Finish pie filling COOK 1
- When all the milk has been incorporated, add the mushrooms, peppercorns, and parsley and season with sea salt
- Take off the heat and allow to cool
16. Bake the pies COOK 1
- Place the mix into small pie dishes, place the puff pastry on top, and make a small hole, Brush the pastry with egg wash and heat in an oven set to 160°C/gas mark 3 for 15 minutes
17. Warm the beef COOK 2
- If the beef needs reheating, place it back in the oven at the same time to warm through
18. Plate and serve BOTH
- Serve the beef with the onions and carrots and a little of the beer sauce
- Place the mushroom pie alongside, either in its ramekin or removed and served open
