Ingredients
- olive oil, to taste
- 1 onion (finely chopped)
- 2 garlic cloves (grated to a paste)
- 1 tbsp tomato purée
- 50 g ‘nduja
- 400 g tinned chopped tomatoes
- 300 ml vegetable stock
- 1 leaf bay leaf
- 1 can chickpeas (drained)
- 250 g king prawns (raw)
- salt, to taste
- 1 handful parsley leaves (finely chopped)
- 1 lemon (zested)

1. Chop the onion COOK 2
- Finely chop the onion
2. Prepare the garlic COOK 1
- Grate the garlic cloves to a paste
3. Soften the aromatics COOK 1
- Place a large saucepan or high-sided frying pan over a medium heat and, once hot, add a dash of olive oil
- In the large saucepan, add the onion and cook for five minutes, until it begins to soften
- Add the garlic cloves and cook for a minute more, stirring
- Add the tomato purée and cook for a few more minutes
🤝 Cook 2 hands over the tomato purée.
4. Mise en place COOK 2
- Prep 250 g king prawns: raw
5. Drain the chickpeas COOK 2
- Drain the chickpeas
6. Chop the parsley COOK 2
- Finely chop the parsley leaves
- Zest the lemon
7. Simmer the stew COOK 1
- In the large saucepan, add the ‘nduja and let it melt in the pan
- Add the tinned chopped tomatoes, vegetable stock and bay leaf
- Simmer the stew for 45 minutes, stirring regularly
8. Add chickpeas and prawns COOK 2
- In the large saucepan, add the chickpeas and king prawns and heat through for a couple of minutes, until the prawns are cooked
- Season with salt to taste
🤝 Cook 1 hands the large saucepan to Cook 2.
9. Plate and serve BOTH
- Garnish with parsley leaves and lemon zest
