Ingredients
- 350 g macaroni pasta
- 800 ml milk
- 50 g butter
- 50 g Doves Farm Organic Plain White Flour
- 100 g red Leicester cheese
- 100 g Gruyère
- 50 g mozzarella cheese for the sauce
- 0.5 tsp ground white pepper
- 80 ml cream
- 1 tbsp Dijon mustard
- salt, to taste
- 50 g panko breadcrumbs
- 50 g mozzarella cheese for topping
- 50 g Parmesan

1. Boil salted water COOK 2
- Put a pan of salted water on to boil as you make the sauce
Meanwhile: Heat the milk COOK 1
- In a separate saucepan, heat the milk, but don’t let it boil
- In a separate saucepan, melt the butter and, when foaming, add the flour, whisking
- Cook this mixture out for a couple of minutes, whisking constantly
2. Add the milk COOK 1
- Add the milk a couple of ladlefuls at a time, whisking each addition gently into the sauce before adding the next
- Once all the milk has been added, allow the sauce to cook for a couple of minutes, stirring regularly
- Taste the sauce to ensure no floury taste remains, if it does, cook, stirring, for a couple of minutes longer
3. Finish the sauce COOK 1
- Remove the sauce from the heat and add the grated red Leicester cheese, Gruyère and mozzarella cheese for the sauce
- Stir to melt the cheeses
- Add the white pepper and stir in the cream and mustard
- Taste and add salt if necessary
Meanwhile: Preheat the grill COOK 2
- Preheat a grill to medium
4. Cook the pasta COOK 2
- Add the macaroni pasta to the water and cook for 6 minutes
- Use a slotted spoon to transfer it to the sauce, mixing well
- In an oven dish, transfer the macaroni cheese and sprinkle with the breadcrumbs, the cheeses, They won’t cover the dish completely, but will melt together as they cook
