Ingredients
- 250 g pasta
- 300–400 g Italian sausages
- 1–2 cup red wine
- 3–4 garlic cloves (sliced)
- 2 tbsp olive oil
- 1–2 cup tomato sauce
- 1 dark chocolate
- ½ cup reserved pasta water
- fresh parsley or basil, to taste
- salt and black pepper, to taste

1. Remove sausage casing COOK 1
- Remove the sausage from its casing and break it into smaller pieces
2. Soak the sausage COOK 1
- In a container, cover the sausage with red wine and let it soak overnight in the fridge
3. Slice the garlic COOK 2
- Slice the garlic
4. Brown the sausage COOK 2
- In a pan, heat the olive oil and cook the wine-soaked sausage until browned and caramelized

5. Reduce the sauce COOK 2
- In the pan, prep the tomato sauce with olive oil and garlic, cooking until softened and fragrant
- In the pan, pour in the tomato sauce and let everything slowly reduce, allowing the flavours to concentrate
- In the pan, add a small piece of dark chocolate and stir until melted, creating a deeper and richer sauce
6. Toss with pasta COOK 1
- In the pan, toss in the cooked pasta with a splash of reserved pasta water until the sauce becomes glossy and coats every strand

- Finish with fresh herbs and a final crack of black pepper
