Ingredients
- kosher salt, to taste
- 450 g penne pasta
- 3 tbsp extra-virgin olive oil
- 1 garlic clove (crushed)
- crushed red pepper, to taste
- 794 g whole peeled tomatoes (crushed by hand)
- 60 g Parmesan cheese (finely grated)
- flat-leaf parsley leaves, to taste (minced)

1. Make the sauce COOK 2
- Crush the garlic clove
- Finely grate the Parmesan cheese
- Mince the flat-leaf parsley leaves
2. Crush the tomatoes COOK 1
- Crush the whole peeled tomatoes by hand
3. Cook the penne COOK 1
- In a medium saucepan of boiling salted water, cook the penne until just short of al dente, about 1 minute less than the package recommends
4. Cook the garlic COOK 2
- In a large skillet, combine the extra-virgin olive oil, garlic, and crushed red pepper
- Cook over medium heat until the garlic is very lightly golden, about 5 minutes, adjusting the heat as necessary to keep it gently sizzling
- Add the whole peeled tomatoes, stir to combine, and bring to a bare simmer

5. Transfer the pasta COOK 1
- When the pasta is ready, transfer it to the sauce using a strainer or slotted spoon

6. Thicken the sauce COOK 1
- Add about 1/4 cup pasta water to the sauce and increase the heat to bring the pasta and sauce to a vigorous simmer
- Cook, stirring and shaking the pan and adding more pasta water as necessary to keep the sauce loose, until the pasta is perfectly al dente, 1 to 2 minutes longer
- Continue cooking the pasta until the sauce thickens and begins to coat the noodles
- Remove from the heat and toss in the Parmesan cheese and parsley, stirring vigorously to incorporate
- Stir in a drizzle of fresh olive oil, if desired
🤝 Cook 2 hands over the Parmesan.
7. Plate and serve BOTH
- Season with salt and serve right away, passing more Parmesan cheese at the table
