Ingredients

The full plan

Split between two cooks — each step says who's on it.

1. Mise en place COOK 2

  • Prep 400 g pork shoulder: dice
  • Prep 1/2 lemon for pork marinade: juice
  • Prep 3 garlic cloves: grate to a paste

2. Cut the potatoes COOK 1

  • Peel the potatoes and cut them into thick slices, into thin chips

3. Marinate the pork COOK 2

  • In a bowl, combine the diced pork with the lemon juice, cumin, paprika, garlic and some salt and mix well
  • Refrigerate for 1 hour

4. Soak the chips COOK 1

  • Place the chips into a bowl, cover with cold water and leave to soak for a few hours if possible, or even overnight

5. Mise en place COOK 2

  • Prep 1/4 cucumber: grate

Meanwhile… COOK 1

  • Prep 1 handful mint leaves: finely chop
  • Prep 1 garlic clove: crush
  • Prep 1 lemon for zest: zest
  • Prep 1 red onion: finely slice

6. Drain the cucumber COOK 2

  • In a bowl, combine the grated cucumber with a large pinch of salt and toss to combine
  • Allow to drain for half an hour

7. Mise en place COOK 2

  • Prep iceberg lettuce: shred
  • Prep 2 tomatoes: slice

8. Heat the oil COOK 1

  • Heat oil for deep frying to a temperature of 140°C

9. Preheat the grill COOK 2

  • Preheat a barbecue or grill for cooking the souvlaki
🤝 Cook 1 hands the barbecue or grill to Cook 2.

10. Grill the pork COOK 2

  • Thread the pork onto skewers and grill either on the barbecue or under a hot grill for around 5 minutes each side, or until just cooked through - take care not to overcook the pork as it will dry out

11. Make the tzatziki COOK 1

  • In a bowl, combine the salted cucumber with the remaining tzatziki ingredients and mix well, seasoning with black pepper
🤝 Cook 2 hands over the cucumber.

12. Reheat the oil COOK 1

  • Fry the chips for about 8 minutes, or until they are cooked through but are still pale in colour
  • Drain on kitchen paper
  • When you are ready to serve the chips, reheat the oil to 190°C

13. Second fry the chips COOK 1

  • Fry the chips for a second time until they are a lovely golden brown – 4–5 minutes
  • Once cooked, toss with some salt, lemon zest and oregano

14. Plate and serve BOTH

  • Warm the flatbreads gently
  • Fill with the pork, lettuce, onion, tomato, tzatziki and chips, serving any remaining chips on the side
