Split between two cooks — each step says who's on it.

1. Make the tartiflette COOK 1

  • Cut the Charlotte potatoes into 1cm dice
  • Cut the small onion into 1cm dice
  • Chop the garlic clove

2. Caramelise the bacon COOK 2

  • In an ovenproof casserole dish, heat the olive oil over a medium-high heat
  • Add the smoked bacon lardons and cook until caramelised and the fat has rendered

3. Slice the cheese COOK 2

  • Slice the Reblochon cheese

4. Cook the potatoes COOK 1

  • Turn the heat down to medium and add the small onion
  • Cook for 2–3 minutes until tender and just starting to caramelise
  • Add the Charlotte potatoes and garlic clove
  • Cook for a further 3–4 minutes, stirring so everything is coated in the bacon fat
  • Pour in just enough water to cover the potatoes
  • Increase the heat to high and cook until the water has evaporated and the potatoes begin to sizzle again, about 20 minutes

5. Preheat the oven COOK 2

  • Preheat an oven to 180°C/gas mark 4
🤝 Cook 2 hands over the bacon.

6. Check the potatoes COOK 2

  • Test a potato for tenderness, if it needs longer, add a little more water and completely reduce again, The aim here is to keep all the flavour inside the pan
🤝 Cook 1 hands over the potatoes.

7. Bake with cheese COOK 2

  • In the ovenproof casserole dish, add the double cream and bring to the boil until it begins to coat the potatoes
  • Lay the slices of Reblochon cheese over the top and transfer to the oven
  • Bake for 10 minutes until the cheese has melted and formed a crust

8. Plate and serve BOTH

  • Serve immediately with some pickles, salad and crusty bread
