1. Preheat the oven COOK 1

  • Preheat the oven to 220°C/gas mark 8

2. Prepare the tomato COOK 2

  • In a bowl, toss the tomato with the caster sugar
  • Arrange it cut-side down on a baking tray and drizzle with a dash of olive oil

3. Mise en place COOK 2

  • Prep 80 g pancetta: chop
  • Prep 1 leek: slice
  • Prep 1 1/2 carrots: slice

4. Mise en place COOK 1

  • Prep 2 celery sticks: slice
  • Prep 1 onion: slice

5. Caramelise the tomato COOK 2

  • Cook the tomatoes in the oven for 20 minutes, or until tender and caramelised

6. Mise en place COOK 2

  • Prep 50 g flat mushrooms: slice

7. Chop the beef COOK 1

  • Cut the braising beef into large pieces

8. Soften the vegetables COOK 2

  • In a saucepan, melt a knob of butter over a medium heat
  • Add the leek, celery and carrots and cook until soft and golden brown
  • Remove from the heat

9. Brown the beef COOK 1

  • In a large pan, heat a dash of vegetable oil over a medium heat
  • Add the meat and pancetta and cook until browned
  • Add the vinegar and stir thoroughly for 1-2 minutes
  • Remove from the heat

10. Cook onion and mushrooms COOK 2

  • In a separate pan, melt a knob of butter over a medium heat and cook the onion and star anise
  • In another pan, melt a knob of butter and cook the large flat mushrooms

11. Mise en place COOK 1

  • Prep 160 g onions: peel

12. Shape the dumplings COOK 1

  • In a bowl, mix the flour, baking powder and salt
  • Add the suet and enough water to bind the mix
  • Roll the dough into small dumplings, approximately the size of cherry tomatoes, This mix should yield 16 dumplings

13. Mise en place COOK 2

  • Prep 1 tbsp parsley: chop

14. Braise the stew COOK 1

  • In a flameproof casserole dish, combine all of the caramelised vegetables with the meat, pancetta, tomatoes and bouquet garni
  • Pour in enough stock to cover and simmer for 2 1/2 hours

15. Poach the dumplings COOK 1

  • Bring a large pan of lightly salted water to a simmer and add the dumplings
  • Cover the pan and poach for 15-20 minutes

16. Brown the onions COOK 1

  • In a frying pan, melt a knob of butter over a medium heat
  • Add the baby onions and cook until browned
  • Remove the onions and set aside

17. Reduce the sauce COOK 2

  • Once the meat is very tender, strain the sauce from the pot into a separate pan
  • Return the sauce to the hob and simmer until it reduces down to a thin gravy-like consistency

18. Return the solids COOK 2

  • Return the solids to the pan with the sauce and remove from the heat
🤝 Cook 1 hands over the stew.

19. Brown the mushrooms COOK 1

  • In the same pan, melt another knob of butter and return to the heat
  • Add the button mushrooms and fry until browned
  • Add both the baby onions and mushrooms to the beef stew
🤝 Cook 2 hands over the solids.

20. Reheat the stew COOK 2

  • Reheat the stew on the stove until hot
🤝 Cook 1 hands over the mushrooms.

21. Plate and serve BOTH

  • Divide the hot stew into bowls and finish with chopped parsley and the dumplings, Serve immediately
