Ingredients
- 1 tbsp vegetable oil
- 2 tbsp Thai red curry paste
- 1/4 lb green beans (trimmed diagonally into 1-inch slices)
- 1/2 lb boneless, skinless chicken breasts (cut against the grain into thin slices)
- about 1 tbsp fish sauce
- 1 tsp granulated sugar
- 1 tbsp oyster sauce
- plain water, to taste

1. Mise en place COOK 1
- Prep 1/2 lb boneless: cut against the grain into thin slices
2. Slice the green beans COOK 2
- Trim the green beans diagonally into 1-inch slices
3. Slice the chicken COOK 1
- Cut the chicken breasts against the grain into thin slices
4. Make the stir fry COOK 2
- Heat the oil in a 10-inch wok or skillet over medium-high heat until shimmering
- In the wok, add the curry paste and cook, stirring constantly and pressing the curry paste against the bottom of the pan until fragrant, about 30 seconds
- In the wok, add the green beans and increase the heat to high
- Cook, stirring and tossing constantly until the beans are just beginning to turn tender-crisp, about 1 minute
- In the wok, add the chicken, 2 teaspoons fish sauce, sugar, and oyster sauce
- Stir to combine

5. Finish the stir-fry COOK 2
- Cook until the beans are tender-crisp and the chicken is barely cooked through, about 1 minute longer
- Taste the sauce and add more fish sauce if desired, Thin with water until the sauce barely coats all the meat and vegetables but is not soupy
6. Plate and serve BOTH
- Transfer to a serving platter and serve
