Ingredients
- 12 asparagus spears
- 8 extra-large eggs
- 2 tbsp fresh mint (finely chopped)
- 40 g butter
- 150 g low-fat cream cheese
- 2 pinch salt
- 3 pinch black pepper
- 4 tbsp vegetable oil
- 1 1/2 tbsp olive oil

1. Whip the eggs COOK 2
- Finely chop the fresh mint
- Crack the eggs into 4 separate bowls, 2 per bowl, Whip the eggs with a fork until foamy
- Add salt, pepper and chopped mint to each bowl
2. Season the asparagus COOK 1
- On a plate, drizzle the asparagus in olive oil and season with salt and pepper
- Roll the asparagus round on the plate so that the seasoning sticks
🤝 Cook 2 hands the plate to Cook 1.
3. Grill the asparagus COOK 1
- Grill the asparagus on the barbecue for approximately 3-4 minutes, being careful not to overcook as you want the spears to retain a bit of crunch
4. Start the frittata COOK 2
- In a very small frying pan over a medium heat, add 1 portion of the vegetable oil and 1 portion of the butter
- Pour in 1 portion of the whipped egg mixture and stir quickly with the back of a fork
- After approximately 1 minute, or when the frittata is half set, arrange 1 portion of the asparagus and 1 portion of the low-fat cream cheese on top
🤝 Cook 1 hands over the whipped egg mixture.
5. Plate and serve BOTH
- Lower the heat and cook for another minute, Carefully slide the frittata onto a plate
- To finish, grind 1 portion of the black pepper over the frittatas and drizzle in a little olive oil, Serve immediately
