1. Mise en place BOTH

  • Prep 1 Poblano chile: stemmed, seed, and finely chop
  • Prep 57 g cheddar or Monterey Jack cheese: shred
  • Prep iceberg lettuce: shred
  • Prep 1 yellow or white onion: finely chop
  • Prep 113 g Mexican-style chorizo sausage: casings removed
  • Prep 1/4 cup cilantro: chop
  • Prep 2 tablespoons tomato: chop

2. Cook aromatics COOK 1

  • In a 12-inch nonstick skillet, heat the oil over medium heat until shimmering
  • Add the onion and Poblano chile and cook, stirring occasionally, until softened, 5 to 7 minutes
  • Add the chili powder, garlic powder, cumin, and kosher salt and cook, stirring frequently, until fragrant, about 1 minute
  • Stir in the tomato paste and cook until it deepens in color, 1 to 2 minutes
  • Add the ground beef and chorizo and, using a wooden spoon to break the meat into pieces no larger than 1/4 inch, cook until no longer pink, 6 to 8 minutes, Off heat, add the shredded cheese and cilantro and stir until the cheese is melted and the mixture is homogeneous
  • Cover to keep warm until ready to serve
🤝 Cook 2 hands over the yellow or white onion, Mexican-style chorizo sausage and cilantro.

3. Plate and serve BOTH

  • To serve, divide the filling evenly among the taco shells or tortillas, about a heaping 1/3 cup each
  • Serve with extra cheese, lettuce, tomato, sour cream or crema, and lime wedges for topping
