Ingredients
- 200 g Scotch Beef fillet (cut into strips)
- 2 shallots (finely diced)
- 2 garlic cloves (finely chopped)
- 1 red chilli (finely chopped)
- 1 tbsp dried porcini mushrooms (soaked in hot water for at least 30 minutes; large mushrooms sliced)
- 1 tbsp double cream
- lots parsley (finely chopped)
- virgin olive oil, to taste
- 1 knob salted butter
- salt and pepper, to taste
- crusty bread, to taste (sliced)
- 250 g good quality spaghetti
- 1 fresh parmesan (to grate over the finished plate)

1. Prepare the shallots COOK 2
- Finely dice the shallots
- Finely chop the red chilli, if using
2. Soak the porcini COOK 1
- Soak the dried porcini mushrooms in hot water for at least 30 minutes, if they are large, slice them
3. Prepare the garlic COOK 1
- Finely chop the garlic cloves
4. Prepare the beef COOK 1
- Cut the Scotch Beef fillet into strips
5. Prepare the parsley COOK 2
- Finely chop the parsley
6. Mise en place BOTH
- Prep crusty bread: slice
- Prep 1 parmesan: to grate over the finished plate
7. Soften the shallots COOK 1
- In a frying pan, soften the shallots in virgin olive oil and stir on a medium heat until they turn opaque
- Add the red chilli, if using, and garlic cloves
- Stir for a couple of minutes
🤝 Cook 2 hands over the shallots.
8. Cook the pasta COOK 2
- In a large pan, put enough water for the pasta, salt it well, bring to a rolling boil, add the good quality spaghetti, and cook to the recommended time, stirring occasionally
9. Cook the beef sauce COOK 1
- Turn up the heat and add the dried porcini mushrooms, keep stirring
- Add the Scotch Beef fillet to the porcini and season to taste
- Add the double cream, constantly stirring until the cream reduces by half
- Add most of the parsley and mix well, adjusting the seasoning if necessary
🤝 Cook 2 hands over the parsley and mix.
10. Toss the pasta COOK 2
- Add the sauce to the drained pasta with a little sploosh of virgin olive oil and the salted butter, toss well
- Sprinkle with the remaining parsley

11. Plate and serve BOTH
- Serve with the crusty bread and some freshly grated parmesan
